In the mid 1980's the Elgin area was identified as a cool climate wine-growing appellation with the potential to provide slow ripening grapes with delicate aromas and fruit character similar to that of Burgundy . Careful site selection and soil analysis led to the first plantings of noble varietals on the Paul Cluver Estate in 1986. Mindful of the management of quality from vineyard to bottle a cellar was erected with the onus being on hand crafted premium quality wines – the Paul Cluver cellar was the first to be established in the Elgin appellation.

The estate falls within the Kogelberg Biosphere Reserve where conservation and sustainable use of natural resources are pursued with the ultimate goal of balance and harmony between man and nature. The Kogelberg Nature Reserve, which forms the core of The Biosphere, is a fynbos floral kingdom with an incredible 1,600 different plant species, making it one of the worlds richest sites of plant diversity.

Within this unique environment exists virgin land, some 400 – 500m above sea level with a variety of soil, aspects and microclimates. The high, cool Elgin Mountain plateau, with its close proximity to the sea and being protected by the mountains, is ideally situated for the production of premium varietal wines. This provides the ideal environment for slower ripening grapes of finesse and delicacy that characterise Paul Cluver Wines.
